Help reqd understanding Profiles & Schedules

I'm confused over how Profiles & Schedules interact & overlap. I'm trying to reduce the alerts at night so am trying to only send email alerts during 'Office hours' but to record event 24/7 but being dim, just can't see how to do this .

Can anyone pls point me at a 'read me' or 'how to' - I can't quite understand the 'Help' notes.

Not sure if the video covers this but I had a little trouble getting the visual timeline editor to set my two mutually exclusive time based profiles: Day Profile and Night Profile. Had to randomly try different ways of using the timeline editor to get them both set correctly.

Other than that, it worked fine to have different notification schemes for day and night.
