Intel i7-10700T & UHD630 IGPU or i3-12100T & UHD730 IGPU?

Morning all.

I currently have my software running on a micro Optiplex which features the former CPU and IGPU combo, but have the opportunity to move it into a later micro Optiplex model with the latter CPU and IGPU combo. I appreciate that in doing so, I'll be halving the amount of CPU cores available, but I'll be upgrading the model of the IGPU, so my question is: which is the better/more capable setup?
FYI: I only have one camera being used with the possibility of increasing this to two at the most.

With sub-streams I don't use the gpu for acceleration any more, so for me I would do a this cpu vs that cpu comparison web search.
